Grilled Spring Onions with Lemon-Marinated Chickpeas

Wondering how to make the most of your CSA spring onions? This is the recipe for you! Fresh spring onions deserve to be center stage, and grilling them elevates this humble veg to a star!

Grilled Spring Onions with Lemon-Marinated Chickpeas

1 ½ C cooked chickpeas, drained and rinsed
Juice and zest of 1 lemon
Pinch of sea salt & pepper
1 T olive oil
16 green onions
2 t coconut oil
Flaked sea salt

Combine chickpeas, lemon zest and juice, salt, pepper & olive oil. Stir to coat & let chickpeas marinate, covered, for at least 15 minutes at room temp (or up to 24 hours in the fridge, the longer the better!).

Heat a grill to high, wash and slice off the very tops of the green onions & rub with coconut oil. Place on grill & cook, turning 1-2 times, until tender & charred slightly, 7-10 mins.

Place chickpeas on a platter & top with grilled green onions. Spoon any extra marinade on top, drizzle with olive oil, sprinkle with flaky sea salt & serve!
